Slow Cooker Chicken Carnitas


This was a great and easy meal to make for our friends tonight. This was perfect for chicken tacos and can be enjoyed again the next day for leftovers!


Tonight we had some friends over for dinner and made these delicious slow cooker chicken carnitas. They turned out great and were a big hit with everyone. Tacos have become a weekly dinner at our house and these chicken carnitas were a good twist on that.



To make these easy chicken carnitas add to your crockpot chicken stock, diced onion, minced garlic, chicken breasts, chili powder, and cumin. Turn the crockpot on for 4-5 hours on high or 6-8 hours on low.



Once the chicken is fully cooked shred the chicken and place it on a sheet pan. Place the sheet pan in the oven under a preheated broiler. Broil for about five minutes to crisp the chicken. Ladle some of the broth over the chicken and give it a toss to coat. Continue repeating this process until the chicken has reached the desired crispness. The should be about three times total.

Ingredients 

  • 3-4 lbs boneless skinless chicken breasts
  • 1 can chicken stock
  • 2 tbsp chili powder
  • 2 tbsp cumin
  • 1 yellow onion
  • 4 cloves garlic
  • Salt
  • Pepper

Recipe

  1. Place in your crockpot chicken, chicken stock, chili powder, cumin, diced yellow onion, minced garlic, salt and pepper. Cook for 4-5 hours on high or 6-8 hours on low.
  2. Shred the chicken and place on a sheet pan. Place in the oven under the broiler for 5 minutes. Remove from the oven and ladle some of the broth from the crockpot over the chicken and toss to distribute. Place back in the oven repeating this process two more times until the chicken is crispy.
  3. Serve with your favorite topping as tacos or use to top a taco salad.
