Hot Corn and Peppers
This is a great dish to have as a side, topping for food, or as a dip to serve with chips. This is easy to make and delicious.
This was a wonderful dish to make with the Slow Cooker Chicken Carnitas. We ate this by itself with tortilla chips and used it as a topping on tacos. We have served this with some grilled fish we had at the beach a few weeks ago also.
Start by dicing red bell pepper and jalapeños and adding it to a bowl with minced garlic, corn, cheddar cheese, and chili powder. Melt cream cheese with butter in a saucepan on the stove and pour over the corn and peppers and mix until the cream cheese and corn coats the corn and peppers. Cook in the oven on 350 degrees for 20 minutes until it begins to bubble.

Ingredients
- 3 cans corn
- 1 red bell pepper
- 3-4 jalapeños
- 3 tbsps butter
- 6 oz cream cheese
- 2 tbsp chili powder
- 1 cup cheddar cheese
Recipe
- Dice bell pepper and jalapeños and add to corn, cheddar cheese, and chili powder in a bowl.
- Melt cream cheese and butter in a sauce pan and pour over corn mixture and combine until the corn is thoroughly coated.
- Cook in the oven on 350 degrees for 20 minutes until it begins to bubble.
