Chicken Pesto Panini

No better way to end a long week than with a chicken pesto panini. This panini is perfect for lunch or dinner!


The panini was just what we needed after a long week. They are easy to make and can be done in about 15 minutes. All you need is your bread of choice, chicken, cheese, and pesto.


Start by butterflying your chicken breasts and pounding them out. Next you will need to season with Italian seasoning, salt, and pepper. Add the chicken to a pan heated to medium-high with a little oil.


Cook the chicken for about 5-7 minutes per side until done. While the chicken is cooking take the bread and spread pesto and cheese on each side. A thin layer of mayo can also be added to keep the sandwich from being too dry.


Now that the chicken is finished cooking place it on the bread that you already prepared and place the sandwiched in the panini press. If you don't have a panini press you can toast the sandwiches in a hot pan and press the sandwiches with another pan on the top. Press the sandwiches until the cheese is melted and the bread is toasty.

  • Bread (I used ciabatta rolls)
  • Chicken
  • Italian Seasoning
  • Pesto
  • Cheese
  • Mayo 
Recipe
  1. Butterfly chicken breasts and pound thin.
  2. Season with Italian seasoning, salt, and pepper.
  3. Cook chicken 5-7 minutes per side until done
  4. Spread pesto, mayo, and cheese on bread
  5. Press sandwich until cheese is melted and bread is toasty.
  6. Enjoy!
