Easy Weeknight Dinner
This is an easy dinner to make on a weeknight. Tonight I grilled chicken and had sweet potato hash and roasted broccoli.
This meal is quick and easy to make on a weeknight. Sweet potato hash and roasted broccoli are favorites of my wife's family so I decided to give it a try making it myself. This turned out great.
For the sweet potato hash I sliced up some sausage and cubed the sweet potatoes and placed them in a hot pan with some oil, salt, pepper, garlic, and cumin. Arrange in a single layer and let cook for about 5 minutes. Once the potatoes begin to tender give them a quick toss to brown the other sides. Continue to toss every 2-3 minutes.
For the roasted broccoli I took the florets and seasoned with salt and pepper. Arrange on a sheet pan and drizzle over olive oil. Cook in a preheated 425 degree oven for 15-20 minutes until desired crispness.
I took thin sliced chicken breast and seasoned them with olive oil, salt, pepper, and chili powder. Grilled them on my Big Green Egg for about 2-3 minutes per side.

Sweet Potato Hash
- 2-3 small sweet potatoes
- Conecuh sausage
- Olive oil
Roasted Broccoli
- Broccoli
- Olive oil
- Salt and pepper
Grilled Chicken
- Chicken breasts
- Olive oil
- Chili powder, salt and pepper
Recipe
Sweet Potato Hash
- Heat a skillet over medium-high heat.
- Add sausage and sweet potatoes in a single layer and let cook for 5 minutes.
- Toss every 2-3 minutes until desired doneness.
Roasted Broccoli
- Arrange broccoli in a single layer and drizzle with olive oil.
- Cook at 425 degrees for 15-20 minutes.
Grilled Chicken
- Season with olive oil, chili powder, salt, and pepper.
- Grill for 2-3 minutes per side until done.
